The cow stomach is actually good! In my country we have a soup in which we put small pieces of cow stomach and we eat it with sour cream and it's delicious. It's like some kind of noodle soup but with cow stomach instead of the noodles and it's better!

The chicken liver's texture is thick and it breaks down easily , it tastes SO good , in the video they did not clean it very well so the blood had it's taste in there probably .
You need to add seasoning to it too otherwise it'll not taste good

Honestly, even fried and burned (like in this video) chicken heart and liver should be more edible than surströmming.

My dad used to cook chicken liver, heart, and gizzards.. Liver you need to dredge through flour with salt and pepper and fried with sliced onions.. Delicious !! Heart and Gizzards he would boil for some time in mixture of beer and water. Once tender and cooled off he would put through the same flour and salt and pepper and fry.. They were yummy when he cooked them.. I would never eat them any other way... I'm pretty sure I'd be puking too !!
If all of these are well seasoned and prepaird well they are delicious and are one of the best meats
