    I drank a lot of kombucha last night and just realized why I couldn't get to sleep. Didn't make the caffeine connection until after the fact.
    I have *a lot* of trouble sleeping through the night as it is and noticed that I was actually getting 8-9 hours lately doing nothing different outside of taking magnesium 3x a day and my homemade yogurt.
    Definitely relegating the kombucha intake to before 2PM.

    I've watched dozens upon dozens of kombucha making videos and it's the first one that actually had a green tea kombucha AND side by side with a black tea kombucha... which gave me the idea that if I want to make fancy colored kombucha for cocktails, I might want to use green tea to make the fruits color more prominent. Like, if I want to make white or pink kombucha.

    Someone else on CZcams said to burp the kombucha, but I think she was wrong! I lost nearly half my kombucha to explosive openings one day doing that, only to find out that once they are in the fridge for a day or so it settles the fizz down. So now I don't burp them anymore and save my burping for things like fermented vegetables! Also, for me I find that if the internal temperature in my home is over 77 degrees it is best to set them aside for a second ferment no more than 18 hours or so, or they get too explosive!

    • @KatieCooksandCrafts
      @KatieCooksandCrafts  Před 4 lety

      Burping can give you a peek into what's going on during the second ferment but it's not essential by any means. There are plenty of clues to let you know when your kombucha is ready. I think there is a fear of bottle bombs, luckily I've never experienced that, despite having VERY fizzy booch.

      This is one of those things that you just have to do what makes your comfortable. Some people want to sterilize with boiling water, or diluted bleach solution, or something like star-san every batch. I don't. The bottles are clean (washed with warm soapy water) but not sterilized. If I had a continuing problem with mold or off flavors, I might consider sterilizing by routine.

    • @jamescarneal7818
      @jamescarneal7818 Před 2 lety +3

      When refrigerated kombucha still ferments just more slowly. Keep this in mind when storing for longer periods as it will still build carbonation and will need burped occasionally, also it is still eating the sugars in the brew so the longer it sits the dryer flavor it will have, keep this in mind as you don't want to drink vinegar unless you like that sort of thing. You can also brew bucha to have a higher alchohol content through proper fermentation but I don't suggest this as it kills the flavors and most of the probiotics which is the main reason for drinking kombucha in the first place. Happy brewing!

    Thanks Katie for another fun video. I like how fizzy your blueberry kombucha was but I'm insulin resistant and generally avoid sugar; I most often use sugar alternatives including stevia, xylitol, many other sugar alternatives. Do you have any ideas for someone like me who wants to try making kombucha but who wants to cut the amount of sugar? I can try it using just a fraction of the sugar you used and use sugar alternatives to sweeten but I really want a fizzy kombucha, though I've never tried it before, I know I like fizzy. I don't mind adding fruit like berries and I know they add natural sugar and your blueberry kombucha looked really good. Thanks Katie for any suggestions.

    • @KatieCooksandCrafts
      @KatieCooksandCrafts  Před 7 lety +1

      unfortunately kombucha needs sugar. Some of the sugar is consumed but unless you ferment it all the way to straight vinegar...there is a lot of sugar

    • @noviceprepper5397
      @noviceprepper5397 Před 7 lety +2

      thanks for the feedback Katie. when I'm ready to start making it I'll experiment using the least amount of sugar and making up the rest of the sugar (during the second fermentation) with berries and hope that the yeast will be good with that. My body wouldn't do well with the amount of sugar many people can consume. I crash really easily (and feel slightly sick when I crash) but I still want to play around with making a low sugar kombucha. It may be months from now but I'll let you know how I make out. Love your videos. Thank you for generously sharing your knowledge.

    Are some scobys better than others? I used to make kefir and bought from a guy online and that one became massive.

    This is my second season brewing Kombucha. I live in San Diego and it's been extremely hot lately so I gave it a break for the summer. I've been playing around with how long I ferment before bottling and I pretty much got that down to how I like it. But almost every batch after bottling is either TOO fizzy that it takes ages just to to release the extra CO2 or not fizzy enough- it loses carbonation about a minute after pouring. I noticed you add some extra sugar before bottling even when adding fruit. I'll try that. I always skipped the extra sugar when I flavor. Any other tips?

      cool the kombucha in the fridge for at least 24 hours before opening. Also make sure you get the sediment on the bottom of your brewing jar, that is the yeast that contributes to carbonation. If you have too much fizz, be careful adding extra sugar, start with just a few grams at a time or it can get explosive

    My question is, how long can we store bottles of kombucha in refrigerator? One or two months okay?🙏🙏
