How to Sous Vide Rack of Lamb

- Super easy weeknight dinner sous vide rack of lamb recipe.
Heat sous vide bath to 133 degrees.
Season rack liberally with kosher salt, fresh cracked pepper and madras curry.
Place in gallon ziplock bag and bathe for 1-4 hours.
Pat dry and sear 60-90 secs/side on hot grill OR
Pat dry and sear on cast iron skillet on stovetop, preheated on medium high for ten minutes, 60-90 secs/side with vegetable or canola oil.
Slice ribs to your preference and finish with fleur de sel or Maldon sea salt on exposed meat surface.

In my experience, no more or less than other cooking methods.

It makes no difference between 1-4 hours because the meat will never overcook at the sous vide temperature.
