Would've been nice if that pen could've charged while on the side of the laptop, but USB-C is still nice.

Is the screen Matter? It looks it. I hate laptops that a like mirrors when looking at a dark image. I know they are more vibrant and colourful but I like the Matte.
It's so confusing how laptops are getting worse over time. Granted, it's a great laptop and the CPUs improve each generation. However, the G3 had a hardware volume rocker, power switch on the side, 1080p webcam (amazing for pandemic times), and a 120Hz panel (with Intel PSR to save battery on idle). I am so glad I got the G3, it just seems to really be holding up. HP needs to move forward, not stagnate. That said, I still think they are leading the pack in business-tier convertibles.
I also have the g3 since 3 years or so, and I love it! Only bad thing is the 16gb ram, I'd love to have 32.
But yeah until the g8 generation there wasn't a lot of improvement.

If the touch screen used to work and then it stops, you should enabled the touch option

If you're on a budget, you should go to the latest one. But G3 is fine in terms of designing, editing and programming.

Yes it would support it, it's x86. You might not get the best performance without a dedicated GPU, but it would still work great. With thunderbolt you can grab an eGPU as well. I run a 2060 SUPER on my 1030 G3 for an extra boost.
