Cheese Muffins Recipe

- Quick and easy recipe for cheese muffins, one of the most savory muffins, fluffy, cheesy in the inside, with a great crispy top. They are simply delicious near a good fresh salad or soup and a good alternative for kids lunch boxes.
Ingredients:
Makes 12 muffins
1 1/2 cups (190g) flour
1 tbsp sugar
2 tsp baking powder
1/2 tsp salt
2 cups (200g) grated cheese (cheddar is good)
1/2 cup (120 ml) milk
1/2 cup (120 g) yogurt
1 egg, beaten
1/4 cup (60g) butter, melted
Freshly ground black pepper
Paprika and grated cheese to sprinkle on top
Directions
1. Preheat the oven to 375°F (190°C). Butter and dust with flour a muffin tray or line with paper cups.
2. In a bowl, whisk together the dry ingredients, flour, baking powder, salt and sugar.
3. Stir in the cheese and black pepper.
4. In another bowl mix the yogurt with milk, egg and melted butter.
5. Fold the liquid into the flour mixture.
6. Spoon mixture into the muffin cups. Sprinkle paprika and grated cheese on tops.
7. Bake for about 20-25 minutes until golden brown.

Just made this and it came out really nice. The only thing I did different was substitute some of the flour for cornflour to really bring out the cheese flavour. Thanks for the recipe. 😊

I just made it tonight. Instead of full 1 1/2 cups of white flour, I did half of it white flour (3/4) & half almond flour (3/4) with mozzarella cheese & it turned out delicious! Thank you❤ God bless you!

this is one of the best things I've ever eaten! I've changed few things like adding cream cheese, parsley, using 1/2 cup of quinoa flakes in substitute for the remaning 1/2 cup of flour and added some flakes of provolone, dried oregano and cream cheese as 'toping'. My dad is going crazy over this :)

Thnx for th recipe! I used kale cos I didn't hav spinach. I also added roughly 1/8th teaspoon of garlic powder (cos I'm obsessed with garlic) and sprinkled some breadcrumbs on top❤️
