the paper is transferring... HOWEVER, it's not transferring the holo, it's transferring the TEXTURE which makes the surface of the chocolate refract light the same way as the paper and in turn makes it holo. Ben is right, the paper is a flat micro-mold

It seems like Beyn is doing more & more. Even with the podcasts. Fine if Cristineâs okay with it, personally I prefer her either doing things on her own or leading it if Ben joins in.
She built this channel & got her following by herself & itâs great to see a woman making it on her own (no doubt Ben has supported her), just sad itâs becoming more a Beyn ft Cristine show.
@@Em280483 Beyyn has done a lot to help the channel, doing most of the business side of things, and does the majority of things for Holo taco (other than deciding themes and stuff). But the podcast is another thing, itâs his show absolutely and thatâs ok, he does all the background stuff to get whatever is needed (Questions, Reddit posts, websites etc) and as with the main channel, does the business stuff. I donât get why you are so against it
I am not so against it. As explained, I just like to see a woman who has done well for herself continue to hold the focus. Itâs what I & perhaps many others followed her channel for. Things evolve & Iâm sure Cristine is happy. But as a viewer I donât enjoy the reduction in Cristine time & the increase in Beyn time.

Ben made perfect sense. It's literally the liquified chocolate seeping into the teeny tiny grooves on the holo paper. It solidified and retains a mirrored but similar effect that the paper holds: breaking up light into its separate colour wavelengths. Et voila! Holo choco!

ok- resident scientist here, the reason the holo was âspreadingâ in attempt 4 is bc of the way the air bubbles pulled the film off so slowly and carefully that it didnât destroy the microscopic lines in the chocolate :)

Pro tip from a pastry chef: If you ever want to temper chocolate at home again, just put the bowl with the chocolate in an bigger bowl with ice and stir over it, or put a bag of ice underneath, I always see videos where people temper at home and they say it takes forever but tempering chocolate at work literally took me 5-15 mins total, itâs so sad to see yâall struggle lol

Imagine if you coated the sheet with a thin layer of melted sugar, i.e. sugar glass. In theory you could then use that as holo sprinkles. You could give the "Diamond cappuccino" another try! Note: Melted sugar is super hot, the holo sheet might not be suitable for this kind of use. Maybe Cristine the Science queen can look into it?

Likely not, bc youd have to melt the sugar to become a smoother candy not crystals, the particles may not fit in the gaps in the mold, and hot sugar would likely destroy the mold.
If you wanna see a professional try, id go request it from Ann Reardon on twitter, her holo chocolate video is very well explained and she knows exactly what's up with food science.

@@esmeraldagreengate4354 The way the paper/film works is that there are little grooves that are angled just right so they sort of separate light to show a rainbow. When you use the film as a mold you're putting the grooves onto the chocolate. There's no Holo on the film that goes into the chocolate, you're just making the chocolate do the same thing as the film. Light will reflect off of the chocolate, where the grooves will seperate that light to show a rainbow. Hopefully that was correct and made sense :D
@@esmeraldagreengate4354 You can't see it because it's too tiny, but there's a texture on the plastic (which is called a diffraction grating). The texture is what splits the light. It's like microscopic prisms. When you smush chocolate into it, the chocolate molds to that tiny texture and becomes a prism in the process. The tiny texture on the chocolate is capable of splitting the light just like the grating is.
Kudos to yall for attempting tempering. I remember learning this during our dessert part of cooking school curriculum and omfg. If I never have to temper chocolate ever again in my life - I would absolutely no problem with that lol

Hypothesis: when they pull the chocolate off, tiny lines of chocolate get stuck between the lines of the diffraction grating and come off with it, whereas when the grating comes off on its own, it's gentle enough to leave the micro-choco-ridges behind with the rest of the chocolate
Head causes expansion. When the paper comes off on its own, the chocolate has cooled enough to shrink and pull away. When it has to be pulled off, the chocolate is still too warm and expanded, and so is holding on to the microlines.

Like Cristine, you're not covering the chocolate with a holo layer, you're making THE CHOCOLATE ITSELF HOLO
You're creating tiny lines in the chocolate that the light bounces off. Not a layer of paper or plastic, the actual chocolate!
I imagine it like a music record, how it has those lines in it. This is like if you used a record as a chocolate mold. You wouldn't leave any of the vinyl record on it, but the chocolate would still get all those etched lines. It's like that but the lines are so tiny and dense that they actually refract light.
It is REALLY COOL
Nerd Alert: For anyone who really wants to know, this is called structural color effect and a common example in nature is the Morpho butterfly. Instead of using colored chemicals, creating microscopic structures on the surface can split the incoming white light into reflecting light with various wavelengths/colors. Material science at its finest.

@@_Kuma_ If I understood correctly, i this case, the sheet makes tiny lines in the chocolate and when light hits them, it diffracts. I don't fully get the science (I'm a historian, don't come at me) but it sounds super interesting ^^

Those of you who didnât understand = holo is not like a colouring , more like a piece of paper molded to reflect light . If you put some chocolate on top of the holo sheet , the chocolate molds into the same shape as the holo, this mold is microscopic so the human eye canât see it . Now when the chocolate sets in the right way ,it will also be molded to reflect (idk the proper word for it ) the light .
This was 11 year old selfs take on it anyway . So I apologise for anything I got wrong .

@@torijackson339 I know what he was saying but.. the way it ended up did not seem like it was working that way. I think a layer of the holo film actually transferred onto the chocolate lol

@@XSaffie_LoveX i think it may have seemed like that bc the initial bubbles created a gap in the holo film so naturally it did its thing by refracting light so you see the holo (the choc below those particular spots didn't produce holo bc its not touched by the mold initially). however the other places where it did mold choc (so no bubble, no light refracting) created the holo on the chocolate after taking it off.

Just in case anyone is curious-- basically it's a mold that makes the chocolate refract light in a way we see as holo-- even though really it's just rippled chocolate
yeah he tried to explain it like 30 times and Christine still wasn't getting it.
I understood that but then the chocolate adapted the holo pattern when Christine press on it so that was kinda confusing. I thought it would finish setting with the mold.
@@sing6125 yeah that confused me too. Maybe she was pressing it into the mold? If you're still confused I recommend how to cook that's video just like Ben Naughton recommended
@@sing6125 it was probably because the ridges that make the pattern are extremely tiny so when they ripped the film off, pieces of chocolate did break off and got stuck in them. The air bubbles started to form by themselves and them pressing and moving the air only made chocolate come off of the film in one piece. I'm pretty sure that's what happened because you can see that the film is kinda dirty in the places where holo didn't transfer and in places where holo was transferred the film is clean and holo
@@sing6125 physics student here! My theory is that when they were peeling the holographic film off at an angle, because the grating is at a minuscule level, peeling it at an angle messed with the grating. The air bubbles, on the other hand, were lifting from the chocolate upright so the grating stayed in place

@@EchoSappho nail have a flat and smooth head (usually hit with a hammer) and screws have little plus or minus sign grooves on the head (drill or screwdriver). hope that helps! ps i agree with you :)

Ben: *speaks in science* So basically you have a holographic film. They call it diffraction paper, so essentially how this works is thereâs a bunch of tiny little lines in it. As the light passes through the lines, if you see white light it diffracts it into the spectrum of the rainbow.
Cristine: So thereâs a firecracker and you pull it *GASP* thereâs hollow inside! I used it when I did my sun glasses. So they call it hollow paper and they have lines like linear hollow. When the light passes though the lines you see magic. So you see rainbows.
