Tried it! Great recipe. I was nervous to do direct on stove top so I did a double boiler method instead. Didn't have a thermometer so I turned off when it thickened. Perfection!
Another thing that is perfection is adapting a recipe to suit your style. I am happy you like it. How do you enjoy it with? On toast?
@@AveryRaassen I will use it on low carb vanilla ice cream. I used one cup swerve to replace the sugar and it works very well into my diet. I am excited.

I followed this recipe for a lychee curd and it was too watery-it didn't set.🙃
Now there is an idea I need to try. You might need to use lychee flavouring instead of juice or fruit.
@@AveryRaassen yeah, unable to do that I'm afraid, do you think it would thicken up if added pectin? If so how much liquid would you suggest? 🤔
@@shonabailey9365 One of the reason I am hesitant in making a Lychee Curd is that there isn't much acid in the fruit to set the egg and lychee on its own is flavourful but paired with butter and egg, I feel like we will loose the freshness due to the eggyness and fatty-ness from the butter. Thing like lemon, calamansi, kiwi and other citrus or heavy flavoured fruit will work. In terms of pectin, I would go with the recommended pectin instruction. I will need to experiment and hopefully get back to you.
