    I never peel my broccoli rabe. I didn't notice that it was tough. Seems like a waste of time. Love this recipe. Thanks.

    Had this again tonight. Rather than peel the stems of the broccoli rabe, I throw them in with the pasta water and start the water at the same time I start the sausage. Between cooking in the water alone and then with the pasta, the stems are nice and tender by the time the pasta is added to the sausage and broccoli rabe.

    Excellent video. I love that you have your Nonna’s supervision and opinions. Thank you for the explanation on difference between Italian and Italian American versions : sausage and no sausage, parboil rabe vs pan fried only, Romano cheese or no cheese. Romano cheese melts better than Parmesean as I was first told by my Cardiology Professor during my training .Anchovies are Italian Unami! Here in the Midwest, I have to parboil the rabe to decrease the bitterness for the Midwestern whitebread relatives.

    The videos are very good and i truely aporeciate the time and effort that goes into the channel. My family is also from Bari, Pulgia region as well....the preparation that we bring to the various recipes are amazing.

    This is how I prepare this dish, but I use a little chicken stock to help cook the greens and pasta. Broccoli rob is a bitter green and is in the turnup family. Some people call it, turnip tops. Love pecorino romano! Love, love, love. Bon appétit.

    How lucky are you to have such a great Nonna! I'd adopt her in a minute!!! Great recipe btw. We were able to get many bags of hand made Orecchiette from Bari Italy... the handmade stuff from the 'pasta grannies' in the alley way!!! We lost our luggage with the Orecchiette in it :(
    But 4 weeks later(today in fact) our luggage arrived and we are making your recipe!
    Thanks again and LOVE the recipe! And, incidentally... my wife and I both would love to meet your Nonna!

    I make the same dish but instead of the sausage, I use prosciutto like my nanny did 😊😊😊. I’ve also added mushrooms and red pepper when for company ❤️

    I'm Allergic. to fish. an you can't lie anchovies is a fish so if you have a family member who is allergic to fish you have to tell them
