      @Bibhatsu kumar mere puchne ka karn compare krna nhi hai karn ye hai qki mai ek agricultural engineer hu or jis trh se unhone explain kiya wo mujhe bahut achha lga....or unhone bahut se technical terms use kiya hai or jyadatar farmers local language me use kiye jane wale words use krte hai.... being an agricultural engineer mujhe curiosity thi kahi hum same field se to nhi hai ....

    Actually Maida I stopped using from many years after learning bout its health issues and now after seeing this I am totally convinced .I use wheat flour for making all cakes etc and one’s health and not taste is important . If people realise this and explore better healthier alternatives ,usage will reduce gradually

    Good one bro, appreciate your simple and down-to-earth explanation so anyone can understand. In Karnataka, we call Murmure with multiple names depending on the part of the state. We call "Puri, mandaki, murmur"

    For Farming Engineer" nice production.... would be good if you add in a discussion with a physician and nutritionist... For Maida - 1. Loss of protein and 2. Loss of fibre which cleanses the intestines and 3. Hence more exposure to gluten and 4. High simple carb content. The lack of fibre causes quick absorbtion and breakdown of the carbs. Hence a sugar spike; followed by a crash leading to more hunger. Thus will increase Type 2 Diabetes. and 5. chemicals used to bleach will have side effects. NOTE: white flour, white rice and white sugar are all un-natural processed foods. Stay away.... Use whole grain wheat, brown rice, wild rice or parboiled rice; gur/jaggerey/honey.

      Even whole wheat flour though has fibre but also has GLUTEN . Gluten causes immune response in lining of our intestine affecting absorption of nutrients, causing ostroporosis , infertility, nreve damage especially in coeliac disease.
      As you saw , in Maida process chemicals are used similar like sugar which was a revelation ! Thanks farming engineer for opening our eyes.
      Gluten in Western world and even in India is recognised as precursor of many diseases . Lectin in wheat , even Aubergine, Tomatoes , LENTILS causes leaky gut, inflammation in blood vessels causing inflammatory response leading Fibrin accumulation, constant Insulin secretion for sugars causing Insulin resistance leading to diabetes, Arthritis .
      JOWAR SURGHAM , BAJRA MILLET , RAGI DOES NOT HAVE LECTIN , so Ancestors and villagers eating this healthy diet was best and we deviated from that .
      So no GLUTEN , SUGAR like maida , wheat , pav, cake , mithai,

    बहुत सालोंसे यह प्रश्न मेरे मन मे उछलता रहता था कि आहिर जब दोनों आटा और मैदा गेहूं से बनते है तो मैदे को हानिकारक और आटे को पौष्टिक क्यों कहा जाता है?
    और ये भी के मैदा इतना सफेद कैसे होता है?
    मैन कभी किताब पढ़ कर जानने की चेष्टा नही करी।
    किन्तु यह वीडियो देख कर सारे जवाब मिल गए।

    Kernal is removed and endosperm is used to make maida , but what abt the germ how isnit removed ? Just a doubt

    Thanks for information.
    I can't digest maida, now I know the reason for it.
    Simple flour is chrushed only one time and that maida is chrushed with many rollers and above it's bleached.
    Literally flour is better....

    Brother is a beautiful video I am living in Canada from 20 years I did my agriculture engineering from India but the way you teach the process of making white flour is a totally different
    North America now they're interested in whole wheat flour only and don't they don't recommend it to eat white flour called Maida.

      Used as cattle feed. Also some part of it is mixed back with the kernel to make roller flour mill atta, a cheaper version of chakki atta.

      The bran is sold as cattle feed. Also known as Chokar. I manage a roller flour mill (Shivam Agro, Bargarh Google it). Any doubt feel free to ask.

      More demand/consumption than whole wheat flour i guess.....demand controls pricing. Food & hotel industry use more maida than atta....
      Also shelf life of refined flour is longer, easier to use, tastes better

      Because from wheat grain you get maida ,suzi/rawa and chokar(outer shell of wheat)
      But wheat flour is the only product from wheat grain
      That's why maida (all purpose flour) and Suzi/rawa is cheap than wheat flour

      Maida doesnt have smell .So if you make maida from cheap wheat ,you wont come to know the difference .Earlier , Maida used to be expensive than Wheat . Hence you will observe Naan is still expensive than Roti.

    It seems Maida making involved much more processing than Aata, so why is maida cheaper than Aata?

      that's the main part it's called Bleaching process. It's mainly chemical process and they use but they call it as bleaching process to mislead pubic. These are the same chemicals they use on Rats to make them Diabetic for testing diabetic medicine's. That's why more diabetic people in India or across the world. These are the bleaching agents they use Organic peroxides (benzoyl peroxide)
      Calcium peroxide
      Chlorine
      Chlorine dioxide
      Azodicarbonamide
      Nitrogen dioxide
      Atmospheric oxygen, used during natural aging of flour.

    In Bengali or Bangla Puffed Rice is called "Moori" or "Moodi", as it spells to write Sadak (Rasta) in English.

      Owing to the bran and germ, Whole Wheat Flour is harder for producers and retailers to ship and store - it goes rancid quite quickly, especially in summer heat. White flour almost never goes rancid. Thus, Whole Wheat Flour is more expensive than white even though less work has been put into the processing of it.

      @@cynthialobo1500 don't know what is defined as what. In the west wheat bran is added back to maida in a proportion and that is called whole wheat flour, they add bran which is bigger in size than atta. I also suspect the process of seperating the bran ie soaking and heating etc does something to the bran. The whole wheat flour when mixed with water it's as if oil has been added. And after kneading for sometime it takes a diffrent texture and taste doesn't work as well as atta
      In atta you just grind the wheat and grind it the bran is also mixed up and ground in the floor then the seive removed the bigger pieces of bran leaving the small crushed/ powdered bran in the atta. Tawa roti comes out well with this and tastes good too. Thus the bran content and quality is different bin whole wheat flour and chakki atta.
      However how the modern packaged atta comes to us I'm not sure. I suspect it's a bit of a hybrid process they are doing. Making maida then grinding bran more finer and then adding it back in a percentage. I wish to get real chakki atta through simple process.

      Also about cost . Maida was always more costly. Delhi in olden days usage of bread was high compared to other parts of India also grocery shops got fresh bread daily and old bread was taken back by vendor daily so customer always got fresh bread. ( I have witnessed this in dozens of shops myself as a child, I was common throughout Delhi) Where was this old bread going? The shopkeepers told me factory wapas. Then what? The rumour ( which was probably true because approx 20% of bread was returned typically) was that it is dried and processed back into maida. Maida thus in Delhi and rest of area around Delhi had a bad rap. People wouldn't even make pooris with it those days. This maida in Delhi was cheaper than Atta. However in rest of India ( I lived in Bangalore and Hyderabad,) maida was costlier than atta and people' were not so stuck up on using it in puris etc.
      I'm not sure what are the prices now.
