我有一次把牛肉泡水几小时后用洋葱腌制了一会，味道比我以前若干次烤的都好。
还有用碳烤或者木烤最好用2 zone fire，就是一边多一些一边少一些碳，这样可以控制火候不容易烤糊

还是买羊腿肉会比较好，肥瘦相间，肉块还是小点 容易烤熟不胡，为了充分用到火，一定要并排不留缝隙，还有个关键就是不要频繁翻面，注意别有明火，孜然粉和粒混合也是关键，你这个家伙事 至少一次出品20个以上 供应量有保证😊

I think Jay got ribeye steak. Of course, that is better than the lamp. My tiny advice is to try barbeque-aged ribeye. That will be the best of steaks. One thing to try is to replace the hamburger patty with ribeye steak. That would be the best-tasting burger.

用美国usda 至少也是choice的级别的牛排说是中国烧烤，中国人有几个吃得起啊，在国内Costco即使是choice级别的都是300多一公斤，价格是美国的至少2倍。

That steel cutting board is a bad idea because the metalic particles are scratched off it into the food. Steel consists of different metals such as nickle and even heavy metal which are bad for health.
What would you recommend? I share your sentiments and need to find alternative.

I use a large china plate as cutting board to cut all my meat and vegetables because it is easy to wash off and food debris can't stay on it, it's the most hygienic way to cut meat without contaminating any surface, the only problem is the plate's surface is slippery for the food to stay still so I must be careful when cutting on it. There are glass cutting boards with an uneven surface to hold the food still but the glass surface is still slippery.
Bamboo cutting board is good for holding the food still, bamboo doesn't promote germ growth but microscopic food particles can be hidden in the microscopic groves on the board, so thorough washing and cleaning is still required. Bamboo cutting board can resist hot water better than regular wood board, so bamboo can be washed in the dish washing machine but without detergent. A bit of vinegar wipe on the bamboo board should help prevent the germ growth but not entirely sterilized. Some people put vinegar in the dish washer or laundry washer but the acid can corrode metal inside the machines.
Each material has its pros and cons.
