    These tips make a lot of sense. I wouldn't want to drive a racecar as a daily, but that's how you win races.
    Harry says his food is optimized to win. I think 'racecar' is a pretty good analogy for that style of cooking.

    I love this collaboration!!! I never thought I’d see this. I literally use both of your recipes. I learned from you to use salt and pepper and I learned form harsoo to use celery seed and Worcestershire sauce. Everyone loves my brisket and pulled pork.

      I'm astounded at WHY anyone would want or need to cook a "competition" brisket? First of all its very expensive to but the ultra prime grade necessary and it;s not like you are "creating" anything new because you are COPYING verbatim from every pitmaster that cooks great briskets for a TROPHY and PLAQUE? What's the point?

    I've been a long time fan of Harry and Jeremy, when I found your channel, I thought, wow, it would be an amazing video collaboration and you guys didn't disappoint. You both have the mind of wanting to constantly experiment and learn, to improve. You both have the solid background in the simplicity of great BBQ, season it well, cook it carefully and respect the process. I felt you were both of a like mind, but Harry's additional experience and exposure to competition brings a completely other tool set you just haven't experienced yet. I remember the first competition video I watched of Harry's, and though, wow, this is so over the top. Then I started applying a lazy man's version of what I learned and it's been great, it really changed my mind and opened it up to unlimited possibilities. Although, I came to the same conclusion, that the full competition recipe isn't perfect for family meals and found a balance with a partial version I'm happy with. I was really happy to hear that same statement today. I wonder if this experience has lit a competitive spark in Jeremy. I guess time will tell, chances are we will see some influence to some degree.

    Competition brisket is all I make when I need to get a 4-6 hour brisket out the door minus all of the damn salt. Myron Dixon is the man. EDIT: This is the best competition brisket how-to video that I have ever seen. Amazing!!! Time to find Harry Soo on the CZcamss.

      Myron cooks his briskets way too hot and way too fast. That on top of the foil and beef broth he uses, Id call it more of a pot roast than a real brisket. 🤢🤢

      Myron Mixon knows NOTHING about cooking great tasting brisket. He knows what a bunch of ignorant so-called "judges" like (injected, fat cap down, and bad sauce) and that's all that matters. Aaron Franklin told me once years ago (after a few beers) that when he was on BBQ Pitmasters with Mixon and heard all his "tips" and techniques and even ate some of his brisket that if Mixon tried to sell that "crap" in a Texas BBQ joint it wouldn't last 12 months if his name was on it and less than 6 months if it wasn't. He said Mixon was the king of cooking whole hogs and the court jester of cooking brisket. Then we all laughed and grabbed another beer.

      @@jaysantos536 BIG FACTS!!!! Myron is incredibly overrated and the last person I would take advice on to cook a good brisket. There are sooooo many people doing it better, Franklin included of course. Fuck Myron and all those comp. judges and their shitty taste. I don't even drink beer but I deeply envy you being able to shoot the shit over a couple beers with Aaron.

    I really enjoy your videos. I'm just now coming back to the off-set way of BBQ. I've been a drum smoker on the BBQ circuit for years. (started with an off-set back in the 90's)
    No better flavor than cooking with wood on an off-set pit.
