We had a 1980 Fairmont when I was a kid. It was nothing like this. Ours was mostly broken.

Nope, owner bought this stock and has always been LS swapped
clean fairmont i too own a 78 original v8 car so i got love for em but why the ls? a 302 or 351w will easily swap in and a 351w has the potential of any ls the aftermarket is flowing with performance ford parts so why the crossbreed?
Because the 4.8/5.3 LS style engines are cheap and plentiful(~$500 complete). All they really need is a cam and some boost to make 600+ rwhp.
You said it...Chevy motors are cheap...I will admit Ford does have a higher price on there crate engines, but if you build a Ford motor, balance & blueprint, etc,it will run hard & strong...heck,Ford won Le Mans 4 years in a row with the 427 FE motor, which was based off of a full sized car motor. Ford's problem was always holding the performance back for reliability in the cars they sold the public. I still say Chevys best motor was the 1969 ZL1...sadly its rare,only 69 Cameros & 2 Corvettes came with it,but a 427 big block, aluminum block,heads & intake...it weighed as much as a 327 iron block motor. It was a BEAST...Ford was denied the 427soch ,& Mopar kept running the Hemi...dang...those were the days.

I have a 79 Futura, but I'm sorry...you put a chevy motor in a Blue Oval...come on man...put a Ford in your Ford. If you wanted something like this but as a Chevy, 79-83 Malibu would have been the way to go. I'm a Ford guy (obviously) but I know & respect many Chevys & Mopars. I actually helped a friend build an 83 Malibu,we put a 327 in it with a 700r4...it was vicious. I just wish you'd have build a Ford motor for the Ford car you're running...331 stroker, 347,351w,408w,427w,all would work well with that FOX chassis...heck,you could drop a 4.6 dohc,or even a modern Coyote 5.0 in there easealy.
