In my opinion, Thumper is fantastic because its rhythmviolence is hypnotizing. The noise metal soundtrack is percussive, but also droning like a pulse. It's easy to get lost in it. Really enjoyed your video. I'll be sure to check out your other work too!
The type of experience with heightened reaction times and focus you mention is a state called Flow. It is when perceived challenge meets perceived skill, the interface melts away and conscious thought stops. Only action remains.
Rhythm is a key part in creating flow but by no means the only tool. [game array] did a great video explaining this in Mechanically Speaking: Shooting in First Person.

I can't wait to try Thumper, it looks like a lot of fun.
I got Thumper because it was free on Stadia, but I've played it a few times and, although I've definitely improved in terms of what I can accomplish, I still feel as though I'm playing the whole game wrong. I think it's because there's not much explanation upfront, so I get the feeling that I don't know what the game's "about". I also don't really see how my actions and the music line up. What am I missing? Am I overthinking or underthinking it?
Alot of the "about" is intentionally ambiguous. Nothing is really named or truly defined because its an abstract alien world. Are there mechanics ur not getting?
