Bob, just a tip I use, line disposable alu tray/pan with foil like boat, throw in meat and whatever, foil top tight for 2hr run. discard foil, save pans for next time, no need to clean.. easy peasy

Shredded ribs. Great
I'm a total greenhorn at the smoker I admit it. I have watched a ton of videos about smoking ribs. I have the exact same smoker you used in this video. Of all the video I have watched your video is the only one that was truly a fall off the bone rib video. Yesterday, before I saw your video, I tried doing 2 racks of St. Louis style ribs, they were extra meaty yes. I did the 3-2-1 method, they came out somewhat tough and no where near fall off the bone like yours. Today I am going to try using bayback ribs instead. I am still trying to deduce what went wrong. I hope I can get to the point after trial and error where my ribs come out like yours. Awesome video, sir.
The larger rib cuts can be tricky as to not overcook the small rib sections but making sure to cook it long enough for the thicker sections to get tender. You could try extending the 2 hour stage to 2.5 hours and make sure you have some added liquid in there, that should make them more tender. Also be careful with stage 3 (the 1 hour final stage) not to overdo it as that could dry them out and make them dry or tough. Thanks for watching!

I followed your video to the T with my new Masterbuilt Electric Smoker and it's a total failure. The meat is not pulling away from the bone after even 2:45 brazing in the pan. In your video the meat was falling apart after this step. This is the second smoke of baby backs I've tried with the same results. What am I doing wrong!

Yes, the membrane was already removed on this rack. If it's not already removed, use a blunt knife to slide under the membrane and use a paper towel to help grip the membrane as you slowly pull it off. Thanks for watching!

You're welcome Steve! I have several different styles, all have been purchased from QVC over the years. Some are the old "Techniques" brand, others are the "Cooks Essentials" brand. I've been looking for the MES 400 and can't find a local supplier. Do you still recommend ?
To be honest, I now use my wood pellet smoker much more frequently than the MES. That's not to say that the MES doesn't produce some good food, but the latest generation of wood pellet smokers are easy to use and work very well.

Justin Reily the bad thing with cooking in pans is that the pans get hot aswell with the ribs sitting in them. Cook ribs straight on the rack

I have difficulty washing the miserable chrome racks. Wish Masterbuilt would offer non stick grills. Has anyone found a solution?
I gave up, just knock off the big chunks and let er rip... I never use pans, only for texas crutch (wraped) 2hr run (disposable alu pans, foil bottom and top, reuse pan later) last 1hr basting on the grill.
Spray the racks down with Pam before your cook - also remove racks you aren’t using while smoking.
