This one's speciality is the mild fragrance of fresh Bay leaves that permeate through the appam. If you use banana leaves, and don't have access to fresh bay leAves, you can take a few dry leaves, pre steam them, then place it in a banana leaf.
The leaf is therali leaf, available in Nagercoil market, it's very tasty cooked in this leaf,if it's unavailable it's ok,do with b, plantain leaf வாழையிலை
