WITBIER | How to Brew the BEST End of Summer Beer | Grain to Glass | Brewing with Spices

  • In this video, I brew a classic Belgian-Style Witbier, or bier blanche with coriander, orange peel and cardamom. This turned out incredibly good, and is actually one of the oldest styles of beer which draws its heritage back to a time before hops were used for bittering beer, and spices and herbs were used instead. This beer was awesome, super creamy and with a lovely spice character of bright citrus, zesty coriander and an exciting cardamom flavor that bridged the gap between those two flavors. It had an interesting basil/rosemary note as well. I just wish it was a little paler.

    5.7% ABV 13 IBU
    6.5 lb Belgian Pilsner (47.3%)
    6.5 lb Flaked Wheat (47.3%)
    0.75 lb Flaked Oats (5.4%)
    1 lb Rice Hulls
    Mash at 150 F (65 C) for 60 min
    Water (ppm): Ca: 54, Mg: 10, Na: 65, SO4: 105, Cl: 123, HCO3: 36
    60 minute boil
    60 min - 1 oz (28g) Tettnang (4.6% AA)
    5 min - 10g Crushed coriander Seed, 1.5 oz (35g) Fresh Orange Zest, 3g Green Cardamom Pods
    OG: 1.053
    1 packet of 3944 Belgian Witbier pitched without starter
    Ferment at 68F ramping up to 72 F (18-22 C) for 10-14 days
    FG: 1.010
