Guyanese Chinese Fried Chicken (Simplified)

Chinese Fried Chicken
3 lbs whole chicken
1 Tbs ground Szechuan peppercorns
2 stalks scallions(smashed)
2 Tbs fresh ginger(smashed)
6 cloves garlic(smashed)
1 Tbs salt
1 Tbs sesame oil
1 Tbs 5 spice powder
-Steam for 15 to 20min.
-Rest chicken until cool and pat dry.
-Fry at 350F in deep fryer until golden brown or at internal temp of 165F - 170F - Jak na to + styl

You can pat it dry with a paper towel and like it rest the refrigerator, so it can dry out!
Can you boil in the water if you dont have a steamer?
You can but place it more in a simmer not boil. Make sure you drain and pat dry completely or you will have some issues when frying!

The steaming process cut down on the time in hot oil, hence a juicier meat than cooking raw chicken in old. Duh!!!
