    Incase people are wondering:
    The reason for this tradition is that chillies are rich in a type of lactobacilli, the bacteria that helps in fermentation of milk to form curd. The bowl is then kept undisturbed in a warm place for 5 to 10 hours. After the starter is made, or saved from a previous batch of curd, milk is boiled and cooled.

    One point to keep in mind though, is the climate and weather conditions of where you live. In summer, the amount of starter should be less and you need not warm the milk(Just use at room temperature). In Winter, use warm milk, a spoon or 2 of starter yoghurt and cover the whole vessel with an overturned bowl or something so that it's airtight. The yoghurt will set beautifully. There's no hard and fast rule about any of these, but you will get the hang of the temperature of the milk and the amount of starter, with a few trials and errors. Happy yoghurt making.😊

      @@unfazed4975 I have no knowledge about it. It might ruin the consistency of the yoghurt, as well as mess with the proper setting of yoghurt. I have never used sugared milk for preparing yoghurt, but to be safer, add sugar after it gets set. Try setting a very small amount of sugared milk, if you want to experiment on it. That way you don't lose out much.

    If the cycle of making curd discontinued for some reason this is the best method to revive because if you buy curd from shop still it does not give good test.

      That is probably because you buy a mass produced packaged yogurt(amul, mother dairy) in which the bacterias are modified to stop working normally after few generations (only 2-3 batches can be made before bacteria don’t work as normal anymore) better option would be to ask your local lassi waala for a cup of fresh dahi and use that as a starter.

      ​@@anitanagdev6698I found out the source of the strain comes from a particular kind of rat. In it's intestines is the strain and it's grown in a lab. This way, for the people who make their own yogurt, they would have to buy their starters and yogurts from stores because it is no more continuous. It was hard to come across this information. I needed to know why yogurt is different now. I've been making yogurt for a very long time.

    I used to make my own yogurt, had no idea I could make a starter that way. Nice, I will definitely remember this. 👍
    I usually got my starter yogurt from the store, then kept some in reserve from each batch for the next. I've also never made yogurt that way. I would lightly boil it until it reached 100 degrees, then pour it into separate jars, wrap them in a small hand towel, place the jars on a cookie sheet and put them in the oven with the light on to keep it warm. It always turned out wonderfully.

      Yes, I learnt it from my mom too. ❤️ during winter it takes along time but in summer it ferments within 8- 12 hours, best to keep it inside a microwave.

      Before you go to sleep the first day you start either starter upon awaking the second day boil the milk and then let get warm before putting the starter in cover and place a blanket on top un disturbed at least 8 hrs then place in fridge until cool and to set for 2 hrs and enjoy

    Wow! This is amazing! I didn’t know you can make homemade yogurt!!! I’d love to try making mine. What kind of milk should use as a starter? Full fat, 2%, skim milk??? Room temperature or boiled or just warm? How about the milk that was added to the curd? How long should it be out to ferment for the curd and for the 2nd process (making the yogurt)??     There is no need for chilli which only gives a specific taste.
    Any uncooked milk left at room temperature turns into buttermilk thanks to naturally occurring bacteria.
    Yoghurt can be made from boiled and cooled (or pasteurised) milk or with a teaspoon of cream or a teaspoon of the old mixture.
    When it is heated more (on bain marie), fresh cheese + whey is chosen.

    This certainly appears much easier than the many steps I always did to make yogurt. One good thing about living in arizona, summers are hot enough to culture the yogurt by just setting the jar of milk outside, as long as it's protected from the sunlight.

    Me, not knowing how to make yoghurt has a few questions: 1. Do I take fresh or dryed peppers???
    2. When the yoghurt to eat is finally ready, does it have to stay natural or can I put fruits and sugar or honey in it??

      Use fresh green chillies. You can eat it as natural or scoop out how much you need and add fruits/honey/sugar as per your liiking. There is always your own unique way to enjoy food. You can also use yogurt in some recipes

    It’s only take 4 to hrs 5 for yogurt I make all time at home jus warm up the milk let it cool for lil bit then for 1 full of yogurt cover wit the blanket that’s all 😊

    And what to do with the rest of the yogurt starter? Keep it in the fridge?
    So you just mix the yogurt starter with warm milk, and then wait till it becomes yogurt? How long should we wait? Can somebody explain, please? This is new to me, I'd love to try it. Thank you for sharing this video, I love yogurt! ❤

      In this modern people make yogurt which is not give clear information and have no idea what they are doing.
      They put yogurt into milk to make yogurt....so From where this yogurt made from??

    This is how all the guys in India make their yogurt .
    Those who sell yogurt ...they make it with the Chilli and milk then use that to make more yogurt .
    It's a well kept secret but not anymore

    Does the chili keep the milk from growing bacteria while it isn't refrigerated during the first process?
    When you make the second batch from a spoonful of the first, do you process it the same way?

      Green chillies have the bacteria which is needed to make yogurt. And that will only be used as yogurt starter. After that you have your iwn yogurt and save some to use as yogurt starter. It's just a simple science

    Another trick is a small marble sized tamarind with half a glass of warm milk in a warm place. 😀
