Knäckebröd Swedish Rye Crispbread

  • A step by step guide to baking some traditional Swedish Crispbread made from 100% Rye flour. These are baked and eaten all over Sweden and what was once considered a poor mans food is now eaten in most households every day!
    300g warm water
    500g wholemeal rye flour
    10g baking powder
    10g fine salt
    60g olive oil (optional)
    40g honey (optional)

    Years ago I bought the commercial brands of Knäckebröd, Ryvita made in the United Kingdom and WASA's,German-made? But I haven't seen any so I'm thankful towards you for sharing this video tutorial and trying my hand to see if Rye flour is available here or hoping Amazon ships to Mexico.

    Where can I find the full recipe please, it is hard to follow along with measurements on the video.

      Fair point, I have added the measurements to the Knackebrod now and I am also attempting to add them to previous releases and future ones!

      This all started with looking for a recipe for a product in America called RyKrisp. Originally it was baked by two brothers that had emigrated to the U.S. in the early 1900's. Of course commerce finally intervened and the brothers sold their product recipe and equipment to a larger commercial company which continued to make the RyKrisp true to the brothers recipe. Eventually commerce won out again and they sold out to an even larger commercial company which continued to produce the product surprisingly enough on the still original equipment that the brothers had used and true to their recipe. Well, not enough of a market for them so they shut the works down in 2015. End of a good product. Both my wife and I grew up with this in our homes and we do miss it so I was really excited to happen upon your video!
