Guyanese Vegetable Cookup Rice

Ingredients
1 carrot
1 stalk celery
1 stem scallion
4 stems Cilantro
2 Wiri Wiri pepper
10 cloves garlic
3 cups water
1 1/2 cups brown rice
2 cups spinach
1/2 cup black eye peas
1/2 cup can red kidney beans
1/2 onion
1 tbs dry thyme
2 tbs chief cookup seasoning ( in the video it shows me adding 3tbs but I found it a little too salty so I suggest using 2tbs instead
