I thought they were supposed to be cooked and served as actual crab, as in, they were made with raw fish/shellfish but he politely educated me and said "No, they are basically like a fishcake dough after cooking, you use them however you like" and continued to chow down on a packet of lukewarm saran wrapped imitation crab sticks. Yep, I worked in a fake crab plant for 7 years, yes this is exactly what it’s made of, this and a few additives……we made it from slabs of white fish to packaging. We also made lobster or fake lobster.
It’s like Velveta “cheese” or Spam. Nobody admits they ‘approve’ of it but lots of people enjoy using it in recipes 😀. Have you ever had the crab casserole at your local Chinese Buffet? It’s delicious, and of course uses imitation crabmeat. The bits of celery are real though! Mmmm! 😀

As a Japanese speaking Japanese American. I always knew it as surumi It wasn’t until I was in 1st or 2nd grade I was taught it wasn’t called surumi in the state. But instead called “imitation krab”
