actually you are both not understanding the process very well , the ice water is not to increase profits, this is a misconception , the ice/not water is used to cool the product to 5 degree c otherwise the emulsion process is destroyed . The water content/ after ice has melted is less than 10-12% which is also needed during curing . After curing or smoking the product water content is 3-5% . Hope this helps Regards Sean
