Nicely done!! Like you I always use the lemon zest along with the juice and since we have Meyer lemon trees, that's what I'd use. Also, I'd use fermented garlic paste instead of fresh. It's easy to make and I always have a jar in the fridge. Fermented garlic paste is more mellow (no dragon breath) and adds probiotics to the salad. Now I really need to make this salad!
