easy stuffed eggplant

thanks for watching my video:today I will make a Stuffed EGGPLANT Recipe ,simply amazing and hard to resist.
INGREDIENTS
*2 large eggplants
*cheese - 1 oz / 30 g
*onion - 3 oz / 100 g
*1 green pepper
*1 red pepper
*pepper - ½ tsp
*salt - 1 tsp
*garlic powder- ½ tsp
*olive oil - 2 tbsp
*170g mushrooms
INSTRUCTIONS
*Chop up the onion and green pepper
red pepper and mushrooms.
*Cut the eggplants lengthwise into two equal parts and make boats with a knife - cutting out about 07-08 in / 2 cm of the flesh of the eggplants, chop the flesh.
*Fry the onion in the pan with the olive oil over medium heat for 2 minutes.
*Add the chopped eggplant flesh and fry for another 2 minutes over medium heat.
*Add constantly for another minute over medium heat.
*Add the garlic powder, black pepper, salt, , and stir well and mushrooms.
*Lay out the prepared eggplant boats on a baking dish and stuff with the prepared filling.
*Place the dish into the oven and roast for 20 minutes at 350°F / 180°C.
