- My mother quit school at the age of 14 during The Great Depression to start working. She got a job as a cook and a housekeeper. That is when she learned how to cook and started collecting recipes. This is a very old recipe for Macaroni and Cheese. It uses a cream sauce and only 8 ounces of cheese. This is how she learned how to make it and how we've made it ever since.

Baking it so there are crisp spots makes it the best! To extend it my grandmother added buttered bread cubes on top before baking. She sliced cold leftover mac and cheese, fried it like polenta and topped with leftover red sauce. Love your videos and watch them several times to help with YT. Hi Grandma ! I trust you both had a wonderful Thanksgiving. I LOVE Mac & Cheese, who doesn’t right! .. amazingly you have the very same Corning casserole dish as my mother from the 70’s. At least it looks like one of hers. I am going to try your recipe, maybe next week as I have all my y meals already planed this week.
Growing up my mom often made M&C similar in this way and always served it with stewed tomatoes, but I like it just plain the way grandpa was eating it and the tomatoes on the side. To date my mother still makes it actually. Hard to believe we are approaching Christmas already and before you know it the New Year! I never imagined the years 2024 growing up as I thought 1999 was going to really be in the future of amazing things, Sadly the things I hear in the news is heartbreaking and what’s happening in Israel is just unbelievable. I thought mankind had learned from past mistakes and when I think how my grandfather fought in WWII for the same thing and yet it’s happening again is just unbelievable to me.

Hi Brian I agree with you on what is happening in the news. We had a wonderful thanksgiving and we hope you did also. I love all my Corning dishes and use them all the time. If I go to a thrift store I still look for more Corning dishes. I get lucky sometimes and can find a piece that was never used. Yum! This is how I learned to make it, too. Cheddar all the way (parmesan was for spaghetti). Loved the crusty top. Now that it's just me, though, I skip that step. Instead, I add a little diced ham and a lot of fresh broccoli (tossed in for the last three minutes to cook with the pasta) and serve it up nice and creamy. Quick one-dish meals are great for everyday.

I'll have what Grandpa is having!😋❤ It looks great! I'll bet that shape of pasta really hangs onto the creamy cheese sauce beautifully. I so rarely have any type of pasta anymore, first because I shouldn't, and more recently because I can't ambulate with a potful of anything boiling that needs to be drained. (I discovered this while trying to make a little mashed potatoes on Thanksgiving. Things got pretty dicey there for a while, and could have easily had a much worse outcome, but I eventually got my mps, and they were delicious!) Hi Patricia we love pasta but we try to limit the amount we eat. We hope you had a nice Thanksgiving. I have no problems but I am always very careful handling a potful of boiling water. Years ago I spilled a hot cup of tea on me and I had burned myself. It was no fun. Yes we are trying to keep warm in this cold weather. We dislike the cold weather and the extreme heat. My mother made it with diced cooked ham and diced old Gouda cheese. One of my favorite meals when i was a kid. Happy memories! I used to put tomato ketchup on the side.

"Mac & cheese" is what my mom served my family often back in the 1960's. She had to be economical with the cheddar, too. She liked to add a pinch each of cayenne and powdered mustard and a splash of Worcestershire sauce as well as a bread crumb topping. I absolutely loved Mom's mac & cheese, and I fix mine the same way. I so agree with you - The best mac & cheese is homemade "from scratch" - never from a box.
My mom made exactly the same! Baked Mac and cheese from scratch is the bomb!

My mother had a variation on Depression Era Mac and Cheese with what she called Macaroni Tomatoe and Cheese.
Very basic 13oz of cooked elbows 1 large can of stewed tomatoes and 24 oz of extra sharp chedder cheese.
Just warm the stewed tomatoes fold into the cooked elbows and 16oz of the diced cheese into an oven safe dish and then cover the top with the remaining 8 oz of chese cut into slices.
Bake for 70 to 90 minutes then let cool for 15 minutes then enjoy.
Oooops forgot to mention bake at 350 degrees.

@@GrandmaFeral A small correction the 70 to 90 minute cooking time was for a larger batch of mac and cheese than for the one I gave the cooking time.should be for 60 minutes on the middle rack.
This is EXACTLY like my Mom made it.
She was born in 1929. Learned it from her mother who was probably born in early 1900's. Its in the oven now😅

That is a nice healthy cheese sauce with cheese, milk, and flour. I don't like the store bought or nacho sauces that are all vegetable oil. Boo would like your cheese sauce.

I love your videos but I HATE macaroni & cheese.
Years ago I wound up on welfare for 3 years and at the end of every month I would run out of food stamps and all I could afford for the last week was macaroni & cheese.
It is the most evil and vile food product there is particularly the stuff in the box with the cheese grated sometime during the Roman Empire & there is nothing one can do to improve the taste of the curved noodles or whatever they are.

Kitties and Kathy are fine and sometimes 2 semi new kitties show up for feeding, Shy Gray & an orange and white kitty with a big white spot on his side & one of the biggest raccoons ever who wants the cats food at night. He is bigger than a medium size dog
