Using an LEM #8 Meat Grinder to Grind Venison

  • We were given a deer by a generous family. We demonstrate the operation of our LEM #8 .35 horsepower meat grinder while processing the meat from the deer. This makes us able to be self sufficient with food that grew and was harvested from our Homestead.

    Don't soak your venison. It makes the meat soggy. Just trim off the fat and you'll be fine. As for draining the blood, just hang it for about 20 minutes after you've skun and decapitated it. The blood will come out.

    Dad used to make “venison wow”. I guess it was like a jersey but he made it in chunks, probably a secret rub of seasoning and then put it in the oven at a low temperature forever but as a kid I remember that I loved and it melted in your mouth, he sliced it very thin, miss my dad and his cooking! My son’s been out hunting in the Olympic Peninsula of WA state but has yet to get his first deer. Lucky you Jan and Old Guy! What an awesome gift.

      We are grateful for the deer, for sure. Has your son gotten a deer yet? I don't know when it's deer season up there. I do want to make some jerky, but u think i will make it out of ground meat. Thanks for visiting.

    Nice grinder. I'm looking to buy a new one for next years deer season. Little tip though when trimming and grinding. Chill that meat. I get the temp. down to around 34 degrees. Makes holding slippery meat a little easier to trim and the grinder does better as it cuts faster and keeps the meat from wrapping around the auger.

    What I like to do buy some pig fat to grind into my deer meat... I like to put about 20% pig fat to 80% deer meat... It makes it taste so much better when you bake deer burgers there not so dry that way... Very good Video as always...

    You said that the auger doesn’t stay tight to the cutter anymore, is it because you don’t have the nylon washer in behind the auger or maybe the washer is worn down? Just a suggestion. Nice video.

    Do you have the Nylon bushing in the back of the big bite screw ,Because by putting the stuffing plate on top of your course grinding plate your its not going to grind as fast because your blocking some of the holes on your grinding plates , ..Great video Happy Holidays

    I soak my deer meat in saltwater also. It draws the blood out and helps to get rid of the gamey taste.

    Nice job! If I may make a suggestion purchase a good quality breaking knife. It'll make your life a lot easier working with venison or any meat you need to break down.

    I literally cringed when I heard "we soaked the meat in salt water for a few days", would you soak filet mignon's or ribeye's in water for a few days before grilling them? but to each there own, I did enjoy the review thank you for posting!

    Your knife is very dull. Need to give it a good hair shaving sharpening.
