- The last. of our Springuine videos is an amazingly tasty pasta bake, filled with basil pesto and roast veg, a great one to feed family and friends, it's nice cold too so it can be brought on picnics and work lunches.

For people who don’t want to use wine or eat something with alcohol in it, I tend to use unsweetened grape juice with a little swig of grape or wine vinegar. Usually does the trick ;).

For april, spring fruits and veggies. Strawberry rhubarb, spring peas with their tendrils, baby greens, spring turnip greens, watercress, etc. I love all the spring fruits and veggies.

All the pasta recipes this month have been great. I had Broccoli and Garlic pasta for dinner tonight. Spring vegetables would be a great suggestion for April.

Sweet and sour soup! Black pepper something not chicken! Broccoli in spicy garlic sauce! Homemade mock meat and Chinese style garlic "chicken", sweet and sour "chicken," and orange "chicken" please!
Okay, I’ve read through the comments, all great ideas. Here’s mine. Legumes. We know chickpeas make excellent hummus, falafel, socca, scrambles and quiche. I’ve been exploring how to use all legumes for everything from no meats to tortillas, to crackers. Bean flour of all kinds are on my radar. I’d love to see what y’all could do with it.
If you like italian pasta try Pizzoccheri, which are a type of short tagliatelle, made with 80% buckwheat flour and 20% wheat flour. When classically prepared in the alpes, they are cooked along with greens and cubed potatoes, and (vegan) cheese 😉

How did I miss this one? made something similar; rosemary/sunflower seed/sundried tomato pesto; the rest was the same (the veg base you used is called in Bologna sofrito, don't ask me what it means but I took a bunch round to a senior's building where I take The Amazing Kiwi, my one yr old therapy dog, and 90% of the residents are Italian -- at one point Toronto had the largest ex-patriot numbers of Italian citizens, mostly, not all from the south -- they use bread crumbs a lot in lieu of pecorino so they sooooooo loved it all, as did I.

Hi Why cashews and not pine nuts which are more authentic. Also I though you would use nutritional yeast in the pesto.
For next month Indian recipes would be great. Love the channel.
Pine nuts are a bit more expensive, yet... My child is allergic to nuts so I always replace cashews with pine nuts for the creamy-ness.
@@laurx39 They are a seed. You may want to use caution, anyway. They are fine for my child, as are all the seeds, and coconuts, but it is good use care.
this was a great last dish idea for this series. I love the idea of the roasted veg with the pasta and baked. Going to give it a go with some of our vegan parm on top! Yum!

BTW if you are still looking for an inspiration for a theme for a month, how about pizza. If it is too specific you could do recipes with a dough, let's say rolls, quiche, etc, throw in a few sweet bakes too.

Cashews are mad expensive in Sweden. Recommend a substitute?
Maybe pine nuts? I don't know their expense outside north america. I have to use substitutes and choose them for allergy reasons.

I agree. Pine nuts are the traditional nut. I was surprised to see the change but I do love experimenting. Pistachio might also work. But not the smoked ones. Learn from my mistakes. Lol

I love your recipes but use less oil. I am worried about you guys using non stick pan with obvious scratches and scrapes on it. Get yourself some better, less toxic cookware.
