Your cuts are so straight using scissors. I have to use a rotary cutter or my cuts are wonky. 😊

Beautiful block and cute fabrics. I don’t get the part where you only sew half way diagonally and then turn it, when you’re going to sew the other half anyway.
If you are talking about the large square when she goes from the corner to the middle and then stops to do the next corner... It is because she is only sewing the seam on the right side of the drawn line each time. So along the diagonal, those two seams she sews are not joined, they are on opposite sides of the drawn line. This means when she cuts them apart, they make a different style of triangle once opened.

Well, just do it the way YOU want to do it. There are a lot of methods to achieve the same results.
2 different techniques here...your result is 2 different kinds of triangle patterns. One way is to sew down both sides of the line (HST)...the other is sewn down ONE side only... they make two different triangle layouts.
In the half square triangle (HST) the color/pattern is divided corner to corner, on the 2nd technique the color is divided from triangle tip to midway down the long edge of the triangle - (Half a flying goose - LOL)
