Tomatoes, watermelon and beetroot gazpacho
There is nothing like a cold and refreshing soup in these hot summer days. We always have a pitcher ready in the fridge, most of the times it is the classic version of the “Gazpacho” but we also like to have this other recipe.
We hope you like it and if you give it a try, just let us know how it turned out.
Here's the recipe for the different version of gazpacho
Ingredients:
- 370 g (0.82 lbs) watermelon
- 180 g (0.40 lbs) cooked beetroot
- 370 g (0.82 lbs) ripe plum tomatoes
- Extra virgin olive oil
- Vinegar
- Salt
Topping:
- Feta cheese
- Chopped parsley
Instructions:
1. Prepare the Ingredients:
- Peel and chop the watermelon into chunks.
- Dice the cooked beetroot.
- Cut the plum tomatoes into quarters.
2. Blend the Ingredients:
- In a blender or food processor, combine the watermelon, cooked beetroot, and plum tomatoes.
- Blend until smooth.
3. Seasoning:
- Season the gazpacho with extra virgin olive oil, vinegar, and salt according to your taste. Adjust the quantities to achieve the desired consistency and flavor.
4. Chill:
- Refrigerate the gazpacho for at least 30 minutes before serving to allow the flavors to meld together.
5. Serve:
- Ladle the chilled gazpacho into bowls or glasses.
- Crumble feta cheese over the top.
- Garnish with chopped parsley.

      I love my country, but France (that is just 50 minutes away) is special, I don´t know what it has, but it is softer, more beautiful, delicate, educated.... Don´t get me wrong, I love the Spanish passion, I love our drama and our strong landscape. But France is France ♥️

    Thank you Ainhoa & Fran! Another great class. I'd thought when the title of this class was 'Artichokes with Tomatoe Sauce'- it would include the leaves; not just the heart of the artichokes. But I am sure with a little bit of elbow grease- could do this with a whole fresh artichoke. It's certainly a vegetable that is worth the work- in my opinion. I usually boil them with the leaves the dip them in brown butter garlic hollandaise sauce and scrape the leaves with my teeth and then scoop up some hollandaise the the heart and devour it- without the fuzzy choke part of course OR stuff the heart with a mushroom brie pate and baked the breadcrumbs on top! mmmmm-mmm! ❤❤
