Western Star brand cream has got to be the best cream available. Two ingredients: cream from milk and bovine gelatine. It has no vegetable gums (guar gum) or Carrageenan (seaweed) added to it like many other brand of cream on the market. And it tastes so good. ⭐️⭐️⭐️⭐️⭐️ 5 stars

Copha is equal to coconut oil in the US and other countries. I made this once with coconut oil and once with butter to see if it was worth buying the coconut if it wasn't already on hand. Definitely prefer using the coconut oil over butter. The frosting is much sweeter with coconut oil and very thick as this recipe only makes an 8x8 tin. I cut mine down to 1/2 or 3/4 of the recipe the second time around and like that better. Butter is the main flavor you will taste if you use it instead of coconut oil in both the frosting and chocolate topping. Coconut oil is a subtler flavor and lets the mint and chocolate come thru more. I would also recommend using the hershey dark cocoa powder (or equivalent) vs a regular cocoa powder, the brownies turned out much better with dark, and for some reason needed an extra 5-10 mins cook time with regular cocoa. You'll want to store this in the fridge or in a cold place regardless of which you use to avoid a mess when eating - coconut oil can become liquid at room temp and butter will eventually become soft enough that it'll get melty when you touch it.
