INGREDIENTS:
For the Pastry
650g plain flour, plus extra to dust
1 tsp sea salt
125g lard, diced, plus extra to grease
125g butter, diced
100ml ice-cold water
1 large free-range egg, plus an extra beaten egg to glaze
For the Meat filling
2 tbsp olive oil
30g lard, plus extra to grease
2 large onions, diced (275g prepared weight)
2 large carrots, diced (285g prepared weight)
3 celery stalks, diced (200g prepared weight)
3 garlic cloves, finely chopped
800g beef mince
3 tosp tomato purée
3 tbsp plain flour
200ml red wine
4 sprigs of thyme
4 sprigs of rosemary
500ml beef stock
2 tsp Bovril
2 tsp Worcestershire sauce

This sounds like a boring kinda pie but honestly it takes minced beef pie to the next level. The pastry is phenomenal and the filling maybe a cheaper option but you won’t be disappointed in the richness. Give it a try, it’s great xx

Leek and potato soup is one of my favourites. I generally just make up my own recipe as I only need enough for two. I use whatever cream is to hand or maybe none at all. However I make it, it always tastes good though. I usually have some of those cooking bacon pieces which I might add to it. I could make up a larger batch but the freezer quite often doesn't have much spare room.
We have the same problem with lack of freezer space. I think we need one of those ‘let’s eat out of the freezer for a month’ situations lol. Honestly my friend try this with our bacon and cheese soda bread x
