I can’t get any good quality white chocolate - I looked for Lindt or a Belgian and no luck. Best the local shops have is Nestle Milky Way - can I use that? Otherwise I will have to try a different mall to tomorrow

Baking in the oven technique is important. You didn’t show how to bake or the difference between a regular and convection oven
In the recipe, you'll see that I specify that you should use an oven thermometer to make sure your oven is at exactly 150 degrees celsius. Whether you have a regular or convection oven, an oven thermometer will take away any guesswork and give you more consistency. Hope that clarifies!

Kate, do I have to consider altitude when baking macarons & eclairs?
Hi Karen, I would only adjust the oven temperature - increase it by 15 degrees Celsius but everything else should be fine!
Not only does this cake look delicious (just my luck - discovered this video in January rather than December), but the mirror glazing has to be one of the most beatiful I’ve seen! Did you use gold powder with the choc glaze?
