Hello everybody / everyone!
We are so excited to share one of our favourite and most cherished recipes of all time!!!
Our crepe recipe has been in our family since I was very young.
We call them Christmas Morning Crepes no matter what time of year we’re making them because that it when my parents would make them every year.
Every Christmas morning, my parents would make the most magical and delicious brunch of the entire year!
Crepes with the most incredible fillings - sweet and savory!!
Lemon curd, ricotta cheese with nutmeg, cooked spiced apples, berries, mushroom and asparagus alfredo sauce!
It was, literally, the meal that our whole family looked forward to most all year (and still do!!)!!
Who knows where they found the time to do that in the morning, every Christmas!!
It was part of the magic!
Eventually, they became New Years Day crepes and now they have become part of our meals throughout the year.
Early on in our friendship, Fionán and I realized that crepes were traditions in both of our families, and it was clear that we were just mean to be together. ;)
We quickly decided that we needed to have a crepe competition to determine whose were the best!
Needless to say, there have been many competitions and a winner has yet to be decided - which means, we will just have to keep making lots of crepes to find out!
Luckily, Liam feels the same way that the rest of us do about crepes and requests them for breakfast, brunch, lunch, dinner, and dessert, frequently! :)
So, we definitely have them for more than just Christmas morning these days!
We have since learned that in addition to there being an entire day that celebrates our favourite food, apparently, there are PANCAKE RACES!!!!
Yes, it’s true!!
People line up with pans and pancakes at one end of the Main Street in town and race each other to the other end of the street (and sometimes back again!) trying to get there first and NOT drop their pancakes on the way!!
Easier said than done!
Sometimes you are even required to flip the pancakes along the way!!!
So, this year, after filming our episode, we decided that a race was in order!!!!

Christmas Morning Crepes Recipe
3 large eggs
2/3 cup milk
1/3 cup light cream
1/2 cup water
1/2 teaspoon salt
1 cup flour
1 tablespoon butter
1 tablespoon sugar
Beat eggs, then beat in milk, cream, water, and salt.
Add flour gradually, once mixture is well-blended.
Stir in melted butter and sugar and leave batter to rest for at least 2 hours.
Or mix all ingredients in a blender.
Heat frying pan just above medium heat and melt a piece of butter in it.
Pour a small amount of batter onto the hot pan and gently tilt pan so batter spreads around and crepe is thin.
Flip crepe and cook until both sides are golden brown.
Fill with desired fillings and fold.
