The whole of Lothlorien scene is my favorite in this movie, with this being the best part of it. It really shows the power the ring holds over others and even one as powerful as Galadriel. IF she takes the ring it will undoubtedly corrupt her and she will lose herself in the power of the ring. But IF she lets Frodo destroy it, she will also lose the power of her ring when the one ring is destroyed. She's damned either way but I think she only pulls back because she would rather be powerless and weak than to lose herself in corruption.

Nowadays everyone talks about how practical effects and CGI should blend seemlessly to create the best kind of movie magic. Peter Jackson gifted us a great example in this scene: notice how at 1:29 Gollum's eyes go from real (in make up) to CGI, suddenly becoming bigger, more lizard-like. That subtle change completely alters his facial structure to make it more akin to the Gollum we have met in the previous films. Pure genius.

When I was a kid I remember watching this with my dad and he would always be able to sing the lyrics of the music playing during the broken bridge part. Or rather what he thought were the lyrics anyway.
