Hey motherfucker, been a while eh? 😂 Looks like some good sauce there. Was that bacon you added? If you fry it up in the pan before adding your liquid and cheese, it gets infused with that bacon fat flavor. Might need to add some flour to help stop the fat from separating. You could even fry your beef with it so the drippings are all in the pot too and the sauce would be extra beefy. Alternatively, you could possibly use a dab of mild dijon mustard or something as an emulsifier (blends oil and water) but it might affect the taste too much. You can even make lobster alfredo style sauce by making shrimp and lobster broth. See if any butchers or seafood shops will give you or sell you lobster shells for cheap, then just boil them in water for a few hours. Strain, portion, freeze and you can make anything taste like lobster.

Man, I had to watch this vid like 3-4 times, last time *without* looking at it and only listening, because I was mesmerised by the mac'n'cheese. And I just made a batch of rototini yesterday for aglio oglio or whatever (garlic, oil, spinach), and was wondering what to do with the rest of the noodles today. But yeah, screw the "just get over it" foos, whether it's stress, depression, loss of a pet (anyone who ever says "just get another one" is going to need facial reconstruction surgery), anything else. You gotta take care of yourself, however you got to do it.

I like how you cook. :) I'd love to learn how you started learning how to cook. My parents didn't teach me or encourage me when I was a kid. They even discouraged me, often not letting me cook. I'm 34 and I only just recently began learning through CZcams videos. It's very fun.
