Hello Nate! Thank you for sharing that story. Lol. There are a lot of kebab/doner/pizza places there, which I like because I love middle eastern style food. And they adapted to the clientele and learned to make some pretty good pizzas too. The only thing that's not italian is quinoa. Cous Cous originates from north africa, but Siclily for instance, has a traditional recipe with it because of 600 years of arab domination in the south of Italy. Farro is used in several traditional recipes of Tuscany and generally the center of Italy. Piadina is literally one of the most famous food from a region called Emilia-Romagna. What mix of which cultures are you referring to?
