    The yeast amount on this formula is way too high and the dough is blown after 12 hours at room temp. I'm guessing the 1 G is correct for fresh yeast but certainly not instant yeast.

    Mine reaches over one thousand on the dome, which exceeds the AVPN regulation suggestion of 905 f on the dome and 806f on the cooking floor for Napoletana. These ovens are some of the best in the world and not just because I say so. It is, believe me.

    un prodotto studiato male in ogni sua parte , con materiali di scarsa qualità ..... valvola motorizzata che non funziona, motore aspiratore sottodimensionato , erogatore vapore posizionato ad altezza non idonea , mancorrenti antigienici, pannelli frontali soggetti a crepe e deformazioni per via dei vapori fuoriuscenti dalle camere di cottura , pannelli di chiusura superiore non calpestabili di spessore di 2 mm e soggetti a corrosione per le condense di cottura , griglie di protezione luci alogene, internamente le camere , di materiale deformabile lamiera zincata sottilissima ......e potrei dirne ancora tante per il vissuto ....pessimo infatti ritirato dal commercio !!!!!
