Fresh strawberry milk cake (inspired by the popular strawberry milk drink)
This fresh strawberry milk cake recipe was inspired by the popular strawberry milk drink available at cafes! If you enjoy the drink, I hope you get the chance to try this recipe too! Thanks for watching ❤
🍰 Ingredients
Sponge cake layer (bake in 6-inch aluminum pan):
- cake flour (55g)
- oil (40g)
- sugar (40g - split into two portions of ~20g each)
- eggs (2)
- water (50ml)
Bake at 350F and bake for ~27-30 minutes (check if it's ready by inserting a toothpick, and seeing whether it comes out clean).
Strawberry puree:
- strawberries, diced (350g, ~500g of strawberries with stems)
- sugar (60g)
- gelatin (2.5 tsp)
Mousse layers:
- Layer 1: strawberry puree (250g), heavy cream (100g, 50-60% whipped)
- Layer 2: strawberry puree (100g), heavy cream (100g, 50-60% whipped)
- Layer 3: milk (50g), gelatin (1tsp), sugar (1 tsp), heavy cream (50g, 50-60% whipped)
Whipped cream top layer:
- heavy cream (70g, 70-80% whipped)
- sugar (1 tsp)

As far as I know a bento cake is also considered a mini or lunchbox cake they just have diffirent names. If you search it up you'll get the same feedback this is all I know hope it helps

You can try using 70g of all purpose flour plus 10g of corn starch (thoroughly combine it and sift it) to make your own cake flour 😊

You can use half the recipe in the description to make one thin 8-inch layer, then cut it into 4-inch circles to make just one mini cake. Hope your daughter likes it ☺️
