Hot smoked beef brisket (actual BBQ) is king of foods in Texas. It takes 13 hours or so to cook at around 220 degrees F not sure what that is in Centigrade. The second place goes to grilled steaks and ribs of late Wygu beef has become popular for grilling which is higher temps depending on the quality of the beef. As a rule the lower the quality (the tougher) the longer and lower temp it needs to be cooked. The other thing most places need to understand is beef is cooked either well done or medium rare.

What I learned 50 years ago in my [American] school about why Japan felt they could succeed against the US was: 1. Japan's victory over Russia in 1902 (?) gave them confidence 2. That victory took place in Siberia or Vladivostok which was extremely far from Russia's main population center 4. It looked as if that area was so remote that Russia might not have really cared if they lost it 5. American presence in Hawaii was a potential obstacle to Japan's expansion plans in Asia* 6. But Hawaii was also so remote from the rest of America, that maybe America wouldn't particularly care they they lost Hawaii 7. So it was a calculated gamble, but America cared more than Japan expected That's what I was taught - true or false, I don't know, but it seems plausible. *Japan's motivation for expansion plans in Asia is separate - but closely related - story

Texas has a diverse population. I libe in the DFW area and there is a large Asian community. My son took Japanese language class in high school. There are Korean and Indian shopping centers. I have been to several Japanese festivals. Texas is not just Hispanic, African American and white populations.
