I think for the levitating cow one, maybe you can use chained command blocks, and put a lever beside the spawn cow command block so you can activate both at the same time. Anyways, nice video!!!

Here is a tip if you do this kind of challenge again. 1: You can also use haybales to clutch, though, it only REDUCES the fall damage.
see the issue with that is the dragon could combo and kill me without even knocking me to the ground. good idea though
