      yea fried rice recipes usually use day old rice but u can use same day rice

    Thanks for this simple fried rice recipe, I never knew how easy it was to make fried rice as it is my favorite rice at the local Chinese restaurant. I've made this recipe quite a bit since I came across it, I add red pepper, two eggs, extra garlic and a tablespoon of Hoisin sauce along with the dark soy sauce (which you are right about, had to special order it off of Amazon, the first time I made it with regular soy sauce and the second with the dark and their was a big difference in taste). Great easy recipe, will not spend extra on fried rice in the future as it is so easy and cheap, besides absolutely delicious to make.

    I think the most noticeable taste about Chinese take away fried rice is that burnt smokey flavour from when they put their woks under a very very hot gas flame and high heat tossing the fried rice back and forth. When I tried doing fried rice at home I could never get that particular taste, then it dawned on me when watching the Chinese doing it at their takeaway shops that it has to be done in a wok at a very very high heat to get that smokey burnt kind of taste 😊
