Hi ! About the "sausage" it's NOT exact. The first things that you show is a "Rosette", who is a type of charcuterie, that we call "Saucisson". We have really a lot of type of sausages in france like rosette, saucisson sec, diots de savoie, saucisse fumé, knacki, knack d'alsace, saucisse de strasbourg, saucisse de montbelliard, and we use them for different things. About the white thing on the rosette and other saucisson, its a mushroom, that use too make the saucisson, it's completly safe to eat.

If I stay more than a week at the same place, I like to visit the local Costco. We are from Canada.

I dropped by a Costco in Michigan and they have the Buddha's Casserole !!! But, I don't quite understand if this is meant to be a SOUP dish or more a casserole to have with rice / noodles ? I remember having Buddha Jump Over A Wall in California and it was a very filling soup dish.

Something's wrong. The dish is called cacio e pepe. Yours is cacio, pepper, bacon, onion and butter. The Italian dish has only 3 ingredients: pasta, pecorino romano and pepper. Put pepper in the pot, toast it and add cooking water. Prepare the cheese separately with cooking water and mix by putting a little water at a time. remove the pasta 2 minutes before it is ready and continue cooking in the pepper pan, stirring often. let it rest 1 minute. when this is done, drain the pasta and, with the heat off, mix everything together, adding water if necessary (a little at a time).
