American Airlines doesn’t actually let you book the bassinet prior to the flight, I called to book a bassinet and they told me I would need to ask at the time of check in on the day, and when I asked if I could book the bulkhead seat they said the same thing

Been to both - I would add to your list - language. Tahiti speaks Tahitian, FRENCH and some English. Fiji you need to learn French. Plenty of people speak English in Tahiti where tourists go, but when we got off the beaten path, we found few English speakers in Tahiti.
