I like Sake kasu in my miso shiru and use sake kasu and olive oil for a face mask. I am wondering if you heat the sake kasu, would that not kill the beneficial probiotics and enzymes and reduce the vitamin content? I understand it can still be beneficial as a prebiotic, but I would like to be able to eat sake kasu with all of its benefits. I found the taste too strong when I tried eating it without heating it.
Thank you for your comment🙋♀ Sake lees contains yeast, but yeast is killed by heat of about 40°C. Vitamins are also easily destroyed by heat. On the other hand, dietary fiber and minerals contained in sake lees are resistant to heat, and these nutrients are not lost even when heated. To eat sakekasu without sacrificing its nutrients, it may be best to blend it with soy milk or eat it blended with yogurt or other fermented foods🙌
Indeed, i changed from beer to hard drink to wine but since i came living in China, i started enjoying japanese sake more than anything else.

Sorry for the delay in replying. According to an American who is familiar with Japanese sake, it may be a good idea to contact an American sake brewery and purchase sake lees.
The big Japanese grocery Uwajimaya in Seattle has fresh lazy for sale. If there is any Japanese grocery store near you, I would check it out.

I was shooting it warm in a Japanese restaurant because I'd never drunk it before, didn't realise it's supposed to be sipped, ended up with 2 large jars resting in water and what i thought was a shot glass.

What's a good type or brand of sake for a first time drinker? I'm in the US so the sake I have tried from liquor stores seems quite strong.

I wish I could find a good sake and wine in smaller containers. I’d pay a premium. I’m the only one who enjoys sake in our family and the bottle is way too big for me to finish in 2-3 days. I use wine for cooking. Any good chef will tell you don’t use a wine you’re not willing to drink (that “cooking wine” is cr@p!). If you think the sake isn’t good for drinking then why would you use it in your food?
Sake has various effects such as softening ingredients, reducing the smell of fish, and making it easier for the flavor to soak in. So it is a shame to throw it away. Sake is also available in small sizes. Please also check out this video! ▼ czcams.com/video/d9NAuMN0UWs/video.html
