Mochi Pancakes - Chewy and Fluffy with Secret Japanese Ingredient!
In this episode, I'm going to show you how to make Mochi Pancakes!
Serve them with your favorite toppings and enjoy these unique, chewy pancakes at home 😋
Ingredients:
serving: 5 pancakes(the last piece may become smaller than the rest)
160g(5.64oz) Mochiko (sweet rice flour)
2 tbsp of Sugar(brown sugar in the video)
1 tsp Baking powder
1/8 tsp Salt
150ml Whole milk
1 Egg
1 tsp Vanilla extract (optional)
1 tbsp Mirin

Made it this evening. Taste just like I remember it from my days in Japan.
Nice! It also reminds me of Katsuya かつや and Udon restaurants every time I make this 😊
Run cheese run, oh not far enough, poor guy. I assume I could add a little bit of left over pulled pork or shredded chicken too? Just not a lot of. Now I tried to make rice balls, they looked more like softball well beaten 😅. A Chinese couple I know, made rice balls for a community outing, they were round, between a golf ball and baseball size. Since my wife is not real big on the flavor of dashi, could I use vegetable stock or chicken stock instead?
That cheese was trying to escape🤣 Try making the rice without dashi. If you feel like it needs a little more flavor after it's cooked, add soy sauce little by little until the rice tastes good to your liking. Leftover pulled pork and shredded chicken sounds great! I like round rice balls as well, but I think the triangular shape works better for Yaki Onigiri to get the crispy crust.

So would this part of a whole meal or lite afternoon snack? Also while you beat on the cucumbers, I thought of the old, old Saturday night live skit, where they beat on stretchy of a clown, oh no Mr bill, it was called.
Yes, this can be both a part of a meal or a light snack! It goes well with simple onigiri, tonkatsu, or just about anything! Smashing the cucumbers does look quite interesting, doesn't it? 😁

Wow 2 videos this week. I just cooked the chicken in the rice cooker for dinner tonight. I used thighs with a bone, with about 3 minutes left, I added frozen veggies, stir fry style from Costco. Then I found a rice finger recipe for cabbage and carrot slaw. The noodles, we already do, but with the sliced beef will make a good meal, we get a package of sliced beef from Costco and break it into separate bags for the freezer and later meals.
That sounds great😊 Somen is so versatile that it goes well with many ingredients!
Thank you for including the tips like slicing the meat before flattening it and starting with the cold pan. I'm learning how to cook a lot of things for the first time and pork is one of the things I have always been bad at cooking with. I'm looking forward to going to the Japanese market in the morning so I can try this!
If you have a Japanese market nearby, I'm sure they have thin pork slices for Shogayaki! They should be perfectly thin with a good amount of fat. I still recommend chopping the tissue area to prepare the meat. Hope you'll enjoy Shogayaki😊
But, but what about the rice for the dish 😅. My wife likes rice vinegar, so I think this will be a future recipe.
I guess it's a good opportunity to try cooking rice in a pot😁 Rice vinegar does a great job helping the chicken become so tender and adds a deep flavor to the dish!

So what will the family cook for mom on Mother’s Day, please don’t say a burger. I’m think about Korea style,pork ribs, coleslaw and ??? I’m the only one who likes kimchi.

@@JapaneseMomMakes Hi - thanks for the idea, I did a Korean style cucumber salad - 1-cucumber sliced thinly, half tomatoes (diced), 1 Tbsp Tamari Lite, 1/2 Tbsp sugar, 1/2 Tbsp Dark Sesame Oil, 1/2 Tbsp Rice Vinegar, 1 tsp GoChuJang, whisk, add cucumber, tomatoes, green onions and sesame seeds - leave in refrigerator for 30 minutes. I also did similar sauce for stir fry - asparagus, bok choy, garlic, green onions, cilantro and zucchini and 1 tsp gochujang. The cucumber salad was a hit.

Although it might seem a bit scary🤣🤣🤣, pulling apart the cabbage by hand actually results in a clean cut without any mess😁

So does the actual coco recipe also have onions and carrots and pork blended into the sauce? Could you just use the blocks in water and call it a day? Just interested :)
I would say you could, considering store-bought Japanese curry roux is already seasoned with a variety of spices and flavors. However adding vegetables and meats can definitely elevate the dish. Not only do they add depth and richness to the dish, but they also provide texture and nutritional benefits. So overall I think it is worth cooking😄
Just do a freakin recipe. I told my Japanese partner about it and he was excited, but i could literally not sit through youre video, even on 1 and a half speed. Thumbs down. Do better

While you plate it with spinach, what else would be used in Japan. Another use for the sliced sirloin from Costco, besides hotpot.
Any kind of salad such as carrot salad, broccoli salad...and I would also make Kinpira Gobo(braised burdock) if I can get a burdock!

I need to make this when my wife is out, she not a fan of kimchi, I store my small jar in the garage refrigerator. I noticed that Korean cooking tends to use sesame oil, some I asked said typically always dark and not lightly toasted oil.

Ah, bacon would add a nice flavor, for my family it should soften the dashi flavor they are not huge fans of. This is really simple to make.

@@JapaneseMomMakesso I did make this or a slight variation, more for my family’s taste. I start with water and a dashi packet ,turned to simmer as it started to boil and removed the packet. I then added diced ginger, diced leek and towards the end added myoga (expensive little things). Then added the bacon and carrots, about 3 minutes later added lots of cabbage. Then added the miso on simmer for 2 minutes. For my family the flavor was not overwhelming, but pleasant. I also did thin sliced beef marinaded in heated (1/4 cup each sake, soy sauce, mirin and sugar) heated to dissolve the sugar. Then cooked the meat in the marinade and threw in soba noodles and more veggies. Not true Japanese, but the family enjoyed it.

It is very similar to the Traditional belgian waffle dough except belgian waffle batter is a bit more liquid and gooey, I imagine you could freeze the extras and heat them up later in the oven. I would double the recipe and freeze them for later.
It resembles Belgian waffles but with a lighter and chewy texture😄 And yes, you can freeze and reheat them! (350F for 7-8 minutes) I was going to write it down in the description then forgot! Thank you for reminding me!

About a month ago I bought from Costco the thinly slice NY steak, my wife initially was why. I made a hotpot style soup with the meat, the other day she came home with another package. I divide it up to about 1 lb packages and vacuum 🦭, then freeze the packages. Found it works well for other noodle style dishes. Or Chinese dishes. This version of stew is a bit easier than what we make, I think the family would like it as it’s very similar to what we already make during the winter. I could see substituting sweet potato, as my wife does with our stew occasionally.
I keep my slices in the freezer too! I make nikujaga, gyudon, pho, and also works good for Japanese curry 😊

It does! It's a popular dish in Japan, so you'll often find it on the menu at udon restaurants😊
I can get Udon noodles at my local Asian and Indian markets. That is a very clever way to repurpose leftovers. And I love to be able to repurpose leftovers.
If you can get frozen Sanuki udon, that would probably taste the best!

I made jambalaya style rice tonight, yea I kept checking the rice the last 5 minutes. For Japanese rice I will stick with my rice cooker 😅.
Cooking Japanese rice in a pot might sound a bit tricky, but it's not as tough as it seems. Of course, if you have a rice cooker, that's the easy road, and it always does a great job😊
