One thing I just noticed. Ever since Tales of the Jedi I’ve looked at Clone Wars Dooku as almost too cartoonishly villainous, as opposed to the conflicted fallen Jedi we saw years later. But hearing his tone when he tells Sidious he killed Ventress, I almost got the same vibes as “I have betrayed everything I know”

Legends Thrawn and Pelleaon and not the same characters as Canon. In canon they're much more cartoon style villains. When Thrawn in Legends was cruel. It was calculated and with a purpose. He didn't just execute people cause they pissed him off. He was a calculated and rational leader who believed in a unified will as a means for order and peace and provided an interesting Foil to the people who just automatically assume anything done by a democracy is better. Pellaeon in Legends was the titular career soldier. His life was the fleet and he lied about his age to join the Republic Judicial Forces even before the Clone Wars. They were also written to contrast the megalomaniacs that most other Imperial leaders were. Thrawn was never out for a petty dictatorship. He was a true believer.
