Ok, you haven't posted for awhile so I hope you are still reading these posts. The Pepper Jack style is a-maz-ING!!!! So good! think I didn't use as much potato as the recipe called for, so mine turned out more saucy but made phenomenal nachos! So good. When I perfect this recipe, I doubt I will ever need to buy vegan cheese again.

Chile con carne or chili for short has a base of chiles. Often anchos and guajillos as a base. These don't have any real heat so arbols or pequins may be used. Something like that. Cubed beef. Onion. Garlic. Cumin. Salt. Pepper. That is just about it. Stock or water as liquid. The chiles should shine.

Recipe: Makes 8 links Spice mix: 2 tsp garlic powder 2tsp chipotle powder 2 tsp paprika 2 tsp salt 1 tsp oregano 1 ½ tsp cumin 1 /2 tsp black pepper 1 tsp sugar ½ tsp cinnamon 1 tsp chili powder or flakes The rest: 1 Tbsp avocado oil 225g (1 ½ cups) chickpeas 200 ml aquafaba 45 g (1/3 cup) oats 14g (2 Tbsp) ground flax seeds 4 rice papers In a small bowl combine all ingredients for the spice mix and whisk until thoroughly combined. Lightly crush chickpeas using the back of a fork. Set aside, Pulse the oats 8 to 10 times in a food processor or blender. It Should be a coarse texture, not fine like flour. In a large frying pan heat the oil until almost smoking. Add 15g (2 Tbsp) or you spice mix and stir vigorously for 30 seconds. Add aquafaba, oats, crushed chickpeas, and flax. Drop heat to medium low and cook for 8 to 10 mins stirring frequently. Once cooked spread out on a plate and transfer to the fridge to cook completely 2+ hours. Once cooled divined your sausage mix into 8 portions and roll into logs. Cut your rice paper sheet in half. Working 1 or 2 at a time dip your rice paper halves in water and roll your sausage logs in the rice paper. Lightly coat each one with oil to prevent sticking and cook however you like. Fried in a pan with onions, baked, or grilled. It's really easy to make almond milk all you have to do is soak the almonds and water over night. Then you strain amount then you take off the skin. Put in 4 cups of filtered water and blend them up bam.

I don't know what's really going on there but It's not dry at all. In fact, the cake is so moist that one needs to cool the cake completely in the pan.
