I would definitely add a thyme and a little bit of rosemary to the mushrooms, sautéing them and adding them in the end. Cooking the mushrooms with your risotto makes them unnecessarily slimy in texture.

Watched this video and ate at Osteria Del Binari and Osteria Da Fortunata and looked for Luini. Luini - spot on! Really good and satisfying. Del Binari - I ordered the osso buco, the risoto was not cooked well, some of the rice have some pieces that are still hard and not fully cooked. The meat was tender and good. Osteria Da Fortunata - unfortunately is a big disappointment for me. I ordered the strozzapeti carbonara... the pasta was too firm, sauce was salty... maybe it's an acquired taste? But unfortunately not for me.

Rule number one: in Italy is considered impolite to make noise while we eat...

Hi Andy, loved this video and the Rome one! Just came back from a trip in florence and rome. I tried loads of your recommendations in both cities and was not disappointed. Zazas was a strong contender but Osteria da fortuna took the top spot. I had both dishes you tried there and it was the best pasta I’ve ever had. Bonci was also awesome pizza. Thanks for the videos. We need more!!

You ate many of the right things, but you only went to tourist restaurants. Even Bonci, you could have gone to the panificio, not waited, and had a more local experience.
