Мне надо, чтоб один шарик весил 140 грамм*30 штук= 4200 Уважаемый производитель этого аппарата! Скажите, почему на выходе одного цикла, все шарики весят по разному? 120, 148, 180, 110, 135, 163 и тому подобное. Мы испробовали все программы что были, результат не радует. Все 30 шариков, весят по разному. Нет четкого стандарта . Благодарю вас за обратную связь

is it right after the mix or does it have to proof a bit ? How about enriched doughs?
Can you divide bulk fermented dough? Can you bulk ferment and then divide into a big boule and let relax and divide? Do you need to cut it right after mixing? How does the temperature of the dough work for enriched doughs like brioche?
