Mountainside Homestead with Ken and Amy
Registrace 19. 05. 2021
Just a couple in their 50’s who had it with the corporate world and city living. We moved to the mountains of North Carolina to work together doing our own thing. We moved to run an existing small mom and pop vacation cabin rental business. It is on site and offers an unplugged vacation experience like no other.
We built our first chicken coop in 2019 with zero intentions of living a farm life but here we are!
Now there is hardly a day that passes where one of us doesn’t ask “When Was the Last Time?" We are learning everyday what in takes to homestead on the top of our mountain with almost no flat land and very little pasture to speak of.

I don’t have an Insta pot but I boil my eggs in a crockpot while I am teaching. It takes like an hour in the crockpot, but I will say it is a game changer haha also would like to know more about Mr. Kens drink and I make need some to that sour dough start hahahah. Again here I am watching you cook at 10 pm 😂
I am going to have to stop watching you after dinner, because you guys have some awesome looking food. Now at 10:30pm I want some BBQ and some Peach ice Cream. LOL
lol! I’ll take that as a complement :). I love to cook. I really like it when my kids come over and ask for their favorite meals - I’m more than happy to spend the time making it!
@@mountainsidewithkenandamy I love cooking also but it is just me so I don’t do a lot of it. I want to do more canning, fermentation and also dehydration soon. But I hope to taste your ice cream someday haha
Ken you showed up to early he was suppose to be with his barrel. LOL just like me the nap got the best of him LOL
@@loganjackson1335 I think he was tired after his adventure of being a free range pig lol
@@mountainsidewithkenandamy lol he was sure out for the count haha. He was like this whole being free thing is not worth it haha 😆
😂😂😂
That chicken stock looked really good. Just from video when it has to do with your Jam. I say that you may need to add more pectin. Sometimes the recommend amount is not enough but sadly you will not know until it sets or doesn’t set. I also bet the waffles and the plum chicken was awesome.
Thx! Love having the stock on hand and ready to go when needed - and we use it a lot! Good to know on the pectin. It probably didn't help that it was expired :l The unset jam is really good on french toast and makes really good asian chicken. Been making that about once a week since I canned the jam. :)
Ms Amy what are your thought about micro- greens. I have been looking into it cause I can grow them inside the home in a sunny place from my understanding which is not much. Would you say that have the same amount of nutrition as a number plant? Also, dandelion Tea is really good they say.
I like growing the microgreens - they are better for you than the full grown plant from what I understand. Lots of nutrition packed into a tiny plant! What I don't like is that its not really sustainable - Its not like I grow the plant out to full size and harvest the seeds and plant them. You have to keep buying seeds. Yes! Dandelion tea is really good. I also heard dandelion fritters are good too - I have been meaning to make those but haven't yet.
Amy I was wondering do you always keep your laying hens up are do you allow the to somewhat free range? I know you said you have those 40 in there to get them healthy. Will you let them out as soon as you feel they are ok to be with the others? Also, i love your milker. I know that you have to separate the milk in order to make butter. Do you have a video of you doing that? Sorry I am commenting so much I am just watching your videos and love what you guys have done in the short years you have been there.
Hey Logan! Love all the comments and questions - ask away! Yes, I wanted to keep them a bit separated from the main flock for a few reasons. One to get them used to their new surroundings, another was we needed to get the quality of the eggs up. When we bought them, the yolks were light yellow and many of them had shells that were really thin. They were in a dark environment with no access to green pastures. We upped their calcium, got them some good non gmo feed, access to green grass and fresh fruits and veggies. We will probably combine the two flocks if we don't get another coop set up in another area of the mountain. We had some folks that live here that were going to get a coop but it fell through but I am still hopeful that we will have another coop further down the mountain by the cabins. :) I will make a video soon of using the cream separator using sheep milk. I'll also show how to make butter and sour cream. I have been asked to make content of making duck pot pies and I need to get on that one too!
@@mountainsidewithkenandamy I can't wait to see how you do the seperation because I have never seen that. I have only really used and worked with Cows milk. I was going to say with the amount of Chickens you have you can put some beside every cabin and they can have fresh eggs LOL. I wanted to also say I love the views that you have from your porch.
@@loganjackson1335 Cows milk is good in that you dont need a separator for it. Just put it in the fridge and the next day the cream is at the top! Sheep milk is naturally homogenized so it doesn't separate easily. lol! We sure could. Just need a few coops and electric netting and we can have several set ups around the property!
@@mountainsidewithkenandamy Amy how much butter can you get out of a gallon of cream from a sheep or can you can you even measure it like that? I learning. Lol
@@loganjackson1335 Going by memory (which mine isnt good - lol) but its a lot of steps to get to the butter. Like a gallon of whole milk, separated is maybe a pint or 2 of cream, then making the butter, drawing out the buttermilk, it was about a cup or so that we ended up with. I heard a saying a while back goes something like sheep milk for drinking, goat milk for soap making, and cow milk for butter and cheese.
Mr Ken this may be a stupid question, but the meat that you were grinding up was that sheep or beef? It look really nice. I also really liked your sour dough and I am hoping to get into that soon.
Hey Logan, that was actually goat meat. I enjoy making (and eating) the sourdough too but I’m still not really good at it.
@@mountainsidewithkenandamy I have never had goat meat. I really want to learn to make sourdough. I just have to wait to I get to my next place and find a starter.
Amy that looks great. You make it look really easy. :)
Thx! Simple ingredients - Its not toooo difficult to make - the time consuming part is making sure you keep stiring it so it doesn't stick or burn to the bottom :)
@@mountainsidewithkenandamy it looked so delicious and refreshing on a hot summer evening
@@loganjackson1335 It was! You will have to come up and visit and I'll show ya in person how we make it :)
@@mountainsidewithkenandamy I was talking to Ken last night about Cabin 5. :) I hope to maybe neighbors and a community member. :)

My gosh what an absolutely beautiful place you live in. That view off the porch is breathtaking ❤
It’s truly a blessing to live in such a beautiful area. After living in the city with long commutes in traffic, and working corporate for so long, we don’t take it for granted.
Is there porn at the end of your clip lol
Just watched!! Seen kenny, paused video and called Adam. He came up and made sure that was kenny and not Greg. Haha😂 myers genes run strong in him!!

Приятного аппетита 😊
I find the netting to ALWAYS tangle, no matter how careful I am. I would love some sort of really good method, but I pretty much do what you are doing.
I understand, that’s why I try to be patient with myself when woking on it alone. Stuff will always happen.
Gracie hears the babies and is barking at them.
lol! too funny - thx for watching it!
Pretty flock! Love the spots.
Thank you! The EF/Tunis mix produce some pretty spots for sure.
Still can’t believe I walked UP that road during my last visit!

Hi Amy! This is that woman who called you looking for a long ago friend. Your home and cabins look great and living in the mountains, it sort of reminds me of home. I do watch quite a few CZcamsrs and was surprised to see you have a site. Thank you again for returning my call. Keep my number and call anytime. Keep watching "The Chosen"!
